Setup
Set tables, clean and cover, two 8ft tables and 16 chairs.
Wipe counter edge with soap to prevent aunts.
Wash sink area, make coffee.
Add bleach to the floor traps to prevent bugs.
Install clean trash bags.
Set serving line, set beverage bar.
Dust-mop the floor.

Final Prep
Set condiments, check for over runs, clean if needed.
Cut and add plastic table covers to 3 picnic tables, wipe off seats.
Ice down the beverages, four scoops per hour till open.
Wipe off the 16 metal chairs, no bleach.
Check for line of ants; they must go.
Set up carving station, see Richard.
